So today was one of my work days. I went in and only had one manicurist so I let her practice on me during the class hour. I did not want to get lotion on my ring, so I took it off and put it in my "uniform" smock. I told myself not to forget it and to put it on right after the manicure. What did I do? I forgot. I also keep my work keys in that pocket. About an hour later I remembered, reached into my pocket and could not find my ring! Okay, what do I do, PANIC!!! I told most of the students, so in a frenzy everyone was looking for my ring. Where could have it gone? It must have fallen out when I reached into my pocket to get my keys. Everything is locked up, I use my keys everywhere! I searched high and low, the students searched high and low, even in the garbage. The owners found out and were talking about offering a reward. By now it is 1:00 pm. My ring has been missing for over 3 hours. How am I going to tell my hubby that I did something so stupid? I went into the office and said, "Lord, I trust in you that it will be found" and left it at that and started to work again. I was hoping that it would just pop up out of the blue. Around 2pm after trying to work, but not being very successful at it, I heard my bosses wife yelling, "I found it!" Jumping up and down I hugged her. She had found it wedged in her office chair. I usually sit there when I am using the copy machine. I think I hugged her 3 more times and ran out and told everyone!
It is amazing how you feel when you are missing your wedding ring. It seems like a part of you and when it is gone, a part of you is missing. I was scared to tell my hubby. How were we going to replace it? I really like my ring, how am I going to find another one like it? All of these things were running through my mind.
Did I tell my hubby about it? No....so hun, if you come across this and read this, sorry I did not tell you, but I did not want to put a damper on our upcoming weekend together (alone) in Pismo.
Long story short, Do not take your ring off! Who cares if you get lotion on it, you can always clean it. This experience showed me how important my wedding ring is to me! I am the biggest dork...these are the days I just want to kick myself!

Oh those treasured naps....
too bad my kids are not cooperating! Little Missie has changed her schedule and the hour I find best for her to go down is at 10:15am. If she goes down at this time she will sleep 2 1/2 to 3 hours which is great. If I wait until after lunch she is so tired that she only sleeps for an hour or so and is grumpy the rest of the day. Little man on the other hand takes his naps at 1:00ish. So once he goes down, Little Missie is waking up. I have NO time to myself. This is exhausting but this is what the kiddos need. I hope this stage does not last long! I think the bags under my eyes are getting bigger. Soon you will not be able to see my eyes, I will look like a bassett hound!
And I am very excited to announce that Little Man is going to play T-ball this year. He loves to play in the backyard with his dad and is very excited to play. He askes me every day if today is the day he gets to practice with his friend Marcus. He takes after his dad. Little Mans first word was "ball".

FOOD
So, I thought I would make a list of my favorite foods. I need to go to bed but thought this pointless information would be fun to share.
Topping my list is:
1. Chips and Salsa (That is all I really want when I go out for Mexican food).
2. Bread (Fresh made, nothing like the smell.....yum!)
3. Cashews (I am a nut fan!)
4. A good crisp green salad with blue cheese dressing.
5. Pizza (who does not like pizza?) I like Veggie, no onions, canadian bacon and pineapple . BBQ chicken is pretty good too.
6. Pie, apple, any type of berry....with a little ice cream.
Foods I can't stand:
1. Mayonaise (Do not like the smell and I can't stand it touching me!)
2. Horseradish.....gag me with a spoon!
3. Onions (I like to cook with them, but can't stand the texture.)
4. Cantaloupe....smells bad....tastes even worse!
5. Tomato soup...always wanted to like it, but don't.
6. Lamb....just can't eat it.
That is about it. Let me know what you can't stand to eat. I like to know what people like and do not like. It's fun little knowledge.

Not too much snow.....
but we had fun anyways. My nephew went with us and played with the kids. That was nice for us, he was like a nanny. It was a warm day, too warm for snow clothes. We were able to build a ramp and have the kids slide down it in their disks. Here are a couple of pictures. And if you have not tried Shaver Lake Pizza, you should if you are up there.

Meatball Calzones
So easy...I cheat a little.
I use my mini turkey meatball recipe that is in the recipe section. They have lots of flavor. I make the meatballs, add Hunts Garlic and Herb canned spaghetti sauce (my favorite and cheap too)and simmer. I use the Pillsbury pizza dough from the refrigerated section by the biscuits in the grocery store. You need a little thicker dough for the meatballs and this does the trick. I usually buy two since I make a lot of meatball. Lay out your dough with a little flour underneath, add cheese, a little sauce and 2-3 meatball, fold over and crimp with a fork. Bake for 9 minutes or so, whatever it says on the directions for the dough. Not too hard at all. You can add a little sauce on the top and sprinkle with cheese or eat them plain like my hubby does.

Weekly Breakfast and Lunches
This is how I operate. I HATE doing dishes (yes, hate) since I only have a single sink and no dishwasher. So, I make a big batch of pancakes or waffles one morning and freeze them for the week so I can just heat them up in the microwave. Much cheaper than the frozen items at the grocery store. For one dinner during the week, I will make a big batch of beef stroganoff, lasagna, spaghetti and meatballs or homemade mac and cheese, so it is easy to heat up and it is something little missie can eat as well. I like to have the left overs for when hubby or my parents watch the kids so they do not have to make anything. Though, little mans favorite lunch is a tuna sandwich, so he will have that once or twice a week. I always have Progresso chicken noodle soup on hand for little missie and other soups for me. A lot of times I will make a batch of soup for me and little missie will eat that as well.
Today was a pancake morning and this past weekend I made mac and cheese (though my family ate it all in 2 days). I made some more today since I was making a batch for Carrie's troops. Tonight I will make extra meatball calzones. They are good cold the next day too. I will make a batch of brownies or cookies for treats for the week. I like to think that the homemade kind is somehow better for you. I do make oatmeal chocolate chip cookies a lot. That is our typical week.

The worst thing I ever made!
Back in the day when I was dating my hubby, I thought I would make him dinner. I do not know all that I made, but I did make a carrot dish that called for lemon. I did not have lemon, so I looked through the cabinets and found lemon pepper. So, what did I do, yes, added lemon pepper instead of lemon. We sat down to eat and luckily I took the first bite and spit it out! It was awful, inedible, the worst thing that I had made! Now I know not to substitute things based on the name. To this day I do not like lemon pepper...yuck!
The worst thing my sister ever made, was when we were living in Mexico, she wanted to make us carne asada. She was young, but my mom always encouraged us to cook. Because of the lack of space in the kitchen, my mom put the oil and pine sol next to each other. Not knowing spanish, my sister grabbed the pine sol and made our dinner with pine sol, salad dressing and all! We went out to dinner that night.

Nutritionally Speaking
To loose 1 pound per week, you need to cut 500 calories per day equalling 3500 calories per week. So, how do I know what to cut out of my diet? What is so bad that I am eating? For me it is In-n-Out (my favorite burger).
In-n-Out Cheeseburger 480 calories 27 grams of fat (ouch) Add french fries pack on another 400 calories
McDonalds Cheeseburger 300 calories 750 grams of sodium (not good in the sodium category, no wonder you want a coke after that) Add a 12 ounce coke 140 calories, so a 32 ounce coke would be 420 calories. No thank you, I like to eat my calories not drink them!
Talking about drinks
Starbucks Grande Latte 272 calories 126 c/fat, If you get non-fat milk, it will be 168 calories 0 from fat (much better)
Starbucks Grande Mocha 400 calories 198 c/fat
When I stopped drinking Starbucks Mochas, I lost 5 pounds!
Things at home:
2 pieces of Sara Lee Bread 150 calories (not bad)
1 flour tortilla 150 calories (ouch) I like atleast 2-3 when I am eating Mexican food! Add some cheese and grill it with butter, not so figure friendly.
Small bag of chips (lunch size) Atleast 150 calories
Juice: Look at the serving size and see how much you are pouring. You usually pour yourself 2X the serving size.
Cereal: serving usually is 3/4 of a cup. I usually will eat 3 servings. That is why I stick to my yogurt.
These are just some things to think about if you are wanting to loose a little weight or just want to eat healthier. Drink lots of water. If you drink lots of diet drinks, your body craves sugar and salt (which you do not want). One 12 ounce diet soda per day is okay, but no more. Just pay attention to the little things you pop into your mouth and ask yourself, "Do I really want this?" Most of the time it is out of habit, not hunger.
This is a reminder for me as well. What can I say, I like food! Happy and Healthy eating:)

Food Network Recipe
I was watching the Food Network Ultimate Showdown and this recipe looked really good!
I think I am going to replace one of my weekly meals with this!
Pumpernickel Pastrami Panini with Rosemary-Ale JusRecipe
5 tablespoons unsalted butter, divided
1 3/4 cups beef broth
3/4 cup dark beer
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh rosemary leaves
1/2 teaspoon onion powder
1/2 teaspoon freshly ground black pepper, divided
2 1/2 cups thinly sliced yellow onion
1 1/2 cups thinly sliced apple
1/2 teaspoon salt
12 ounces shaved pastrami
8 slices pumpernickel bread
4 ounces thinly sliced sharp white Cheddar
Directions
To make the rosemary-ale jus, melt 1 tablespoon butter in a medium sized saucepan, over medium-low heat; whisk in beef broth, beer, garlic, rosemary, onion powder and 1/4 teaspoon pepper, and allow to simmer.
In a large cast iron skillet, melt 2 tablespoons butter over medium-high heat. Stir in onion, apple, salt and the additional 1/4 teaspoon pepper, and cook for 7 to 8 minutes, stirring frequently, until light golden brown and tender; remove from skillet and set aside.
Divide pastrami equally between 4 slices of bread; top with apples and onions, and white Cheddar cheese. Top with remaining bread slices.
Melt 1 tablespoon butter in same skillet; place 2 sandwiches in pan, place the bottom of a heavy skillet on top, and press down to flatten. Cook for 2 minutes, flip, press down with heavy skillet again, and cook an additional 2 minutes, or until crisp. Repeat process with remaining 1 tablespoon butter and additional 2 sandwiches; slice sandwiches in half, diagonally. Divide rosemary-ale jus into 4 small bowls, and serve with panini for dipping.

Greek Chicken
Level: Easy
1/2 Chicken or 2 chicken breasts
salt and pepper
1 tbsp of fresh oregano chopped
1/2 lemon juice
1. Salt and pepper the chicken and juice the lemon and chop the oregano.
2. Place the oregano in the lemon juice and pour it over the chicken and coat both sides.
3. You can grill the chicken or roast the chicken in a 350 degree oven for about 30 minutes.
Hummus
2 cloves garlic
1 can garbanzo beans
2 tbsp of tahini (sesame paste found at Trader Joes)
3 tbs of lemon juice
1 tbsp of liquid from the beans
salt and pepper to taste and a dash of hot sauce
1. Place all of the ingrdients in a food processor and mix. You can also add roasted peppers for a roasted red pepper hummus or more garlic. You can double the recipe since this will be eaten all at dinner (atleast in our family). I do not like left over hummus.
2. Serve with pita or mediteranean bread (also found at Trader Joes). I also eat hummus with carrots or pita chips.

Tuesday is around the corner...
and I am speaking! Have I done anything about it? NO...Christmas, kids sick, been sick, went to Shaver and now laundry! I am a procrastinator when it comes to things like this. I was a great procrastinator in school and it is not any different when I have to do something. So, I am talking about moms having a good body image of themselves and how we as moms can teach a positive and healthy lifestyle to their kids by being that role model, not saying things like, "Does this make me look fat" to your hubby in front of your kids or "I need to loose 10 pounds!" Yes, I think it, I tell my girlfriends, but my kids will never hear me say that unless it is in a positive light.
So, what I am asking you, is there anything else that you would like to hear or think that would be beneficial to our group? I think I have a little different perspective on body image now that I am in my mid 30's. Yes, I want to look good and want to be healthy, but I do not need to kill myself to be a size 6 anymore. Tell me what pops into your head.....Thanks!
