Dog Biscuits


I made dog biscuits for our dogs and the neighbors dog for Christmas. They were very easy to make and the dogs love them! I thought next year I will make a couple of batches and give them out to all of our neighbors with dogs. This makes a cute gift!


1 cup water
1 cup rolled oats
1/4 cup butter
1 tbsp sugar
1 tsp salt
1 egg
1/2 cup cornmeal
1/3 cup peanut butter
3 cups whole wheat flour

Glaze:
1 egg
2 tbsp milk

1. Boil water and add rolled oats and butter, turn off burner
and let sit for 10 minutes.
2. Stir in the rest of the ingredients until it becomes stiff like dough.
3. Put on a floured surface and knead for 3 minutes adding flour if needed.
4. Roll out 1/2" thick and top with egg wash.
5. Bake at 325 degrees for 35-45 minutes.
6. Cool completely.

Gingerbread boy and girl cookies

 I wanted to make gingerbread cookies today and decorate them. Here is the before and after pictures of them.


I thought I would have fun decorating the cookies a little differently.
I took marshmallows and cut them in half. Then I dipped the sticky side into sprinkles and glued them on using frosting. They were very time consuming to make, but cute.

Caramel and Almond Heavenly Cookies

Caramel and Almond Heavenly CookiesI had these cookies at a cookie exchange and they were soooo good. This recipe is super simple, fast and good.

First line your cookie sheet with foil. Line up 12 graham crackers and add 1 cup of marshmallows. In a saucepan, melt 3/4 cup butter, 3/4 cup brown sugar, 1 tsp of cinnamon and melt together. Once it is melted and sugar has dissolved, take off the heat and add 1 tsp. of vanilla. Pour mixture over the graham crackers and marshmallows.

Add 1 cup of sliced almonds, 1 cup of coconut and 1/2 cup chocolate chips. Put them in a preheated oven set at 350 degrees for 14-16 minutes.

Take them out and cool completely. Cut each square in half to form triangles.

I made these for hubby and he loved them (and so do I)!

Meal Plan Sunday

Meal planning has been hard lately since I go to school every other Tue. night and every Wed. and Thur. night. I have to make enough for leftovers or keep some frozen items on hand. I have about 5 more weeks like this, so I just try to make extra on the nights I cook so my family can eat off that when I am at school.

Sunday- Tri-tip strips, garlic mashed potatoes, beer cheese bread and green beans

Monday- Asian meatball subs and salad

Tuesday- Pork stir fry with oyster sauce and veggies

Wednesday- Leftovers

Thursday- Their choice: Pizza, chicken nuggets, fruits and veggies

Friday- Out to dinner

Saturday- Early Thanksgiving dinner at my parent's. Turkey with all the fixings...yum!

Spooky Lunch

This is what I packed in little man's lunch today. The cheese and meat were in shapes of little pumpkins and the flat bread in moon's and ghosts. He has a side of pumpkin seeds and a pumpkin cookie. For a mid-morning snack he has freeze dried apple slices.

Day Trip on a Budget

This past Saturday my family, 2 adults and 2 kids went to Gilroy Gardens for the day. Gilroy Gardens was decorated for halloween through October and we thought that would be a fun time to go. Admission for Gilroy Gardens is normally $44.95 for an adult and $34.95 for children. This is pricey since the park is only open from 11am-5pm. This is how our family of 4 got in for $30.00!

Plum District is a coupon site like Groupon for the San Jose area. Recently they ran a deal where you could buy 1 ticket for $15.00. I bought one ticket and my husband bought one ticket, total cost $30.00. 
My husband is a Coke drinker so he gets the codes off the packs of Coke and submits them to My Coke Rewards. He had enough points for 2 general admission tickets for FREE!

Even if you get in cheaply, food is still expensive. If you are a member you can save 20% off all food and merchandise, but we do not have a membership. The last couple of times we went we packed sandwiches and snacks. This past time the security guard checked our backpack and the bag I had our lunch in. He asked how many kids we had and looked at the food items again. We had 2 sandwiches, some hummus and flat bread, string cheese, a lunch size bag of chips and 2 juice boxes. He said that was fine since the food was for the kids (I think he was being nice). My husband and I ate whatever the kids did not eat knowing we were going to dinner at 5:30pm and we both had a big breakfast. We did buy 2 ICEE's for the kids and for ourselves 2 soda's totalling $16.00! And that is why we take the chance and bring food.





For dinner we stopped at the Chili's in Gilroy. I am a member of MyPoints (like a swagbucks type of program) and turn in my points for gift cards. We had a $10.00 G.C. and 2 coupons for free kids meals. Our dinner came to $11.00 that evening after coupons and G.C..

We were able to have a fun filled day for $57.00 and it only took a half of a tank of gas to get there and back to Fresno.

What I have been up to.....

I just love fall colors!


I have been MIA for awhile now. I have school every other Tuesday nights and on Thursdays I am gone from 8am-8:30pm. I just finished up helping with little man's school carnival (yay!) and next week I start a 6 week class on Wednesday nights. That's why I have not been doing a lot of meal planning lately. It's back to the basics and I try to cook extra for leftovers during the week.

I am also trying to cut out another $200 from my grocery budget per month, which has been difficult. I have been baking all snacks like cookies and breads. I also have been making my own ranch (not from the packets), from herbs and spices. If we want BBQ sauce I will be making that from scratch too. It's amazing how the little things add up (plus it's better for us if I make it from scratch). I think I am on the 5 ingredient fix right now for dinners. I hope it gets cool enough so I can make soups for lunches.

I can't wait for the holiday's, I am ready for a break! I have 7 more weeks of school...ugh. I just want to wear my sweats, head to the beach and Shaver and enjoy my family and friends.

I picked up 10 lbs of potatoes at Save Mart this week since they were on sale for .97 for 5 lbs. I am going to incorporate them into our dinners this week. I hope they like the baked potato soup (I love it). Happy cooking!

Homemade Berry Sauce

I like plain oatmeal with berries and nuts, but now berries are just about out of season I thought I would make a berry sauce out of frozen berries. I poured it over my oatmeal this morning and it was really good.

Berry Sauce:

3/4 cup frozen berries
1 1/2-2 tbsp pure maple syrup
1/4 cup water

1. Pour into a saucepan and simmer for 5-10 minutes. Blend berries and if you want it without seeds strain out the seeds.

You can add the berry sauce to milk, use as a syrup for pancakes or over vanilla ice cream.

Black Magic Cake


I found this recipe for black magic cake from allrecipes.com. It has a cup of black coffee in it, so I wanted to give it a try (plus little missie wanted to bake something with me). The frosting recipe comes from one of my new favorite blogs Glorious Treats.

Black Magic Cake

Ingredients:
1 3/4 cups all-purpose flour
2 cups white sugar
3/4 unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup strong brewed coffee
1 cup buttermilk
1/2 cup vegetable oil
1 tsp vanilla

Directions:
1. Preheat oven to 350 degrees and grease and flour two 9 inch cake pans.
2. In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt.
3. Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin, pour into prepared pans.
4. Bake at 350 degrees for 30-40 minutes until toothpick comes out clean.

Cream Cheese Frosting:
1/2 cup butter room temp.
8 oz cream cheese (keep cold)
1 tsp vanilla
1/2 cup cocoa powder (add before powdered sugar)
4 cups powdered sugar
1-4 tbsp heavy cream

1. Combine cream cheese and butter and whip. Add vanilla and cocoa powder. Make sure the cocoa powder is incorporated into the cream cheese before adding the powdered sugar. Add the powdered sugar 1 cup at a time. Add 1-4 tsp of heavy cream to desired consistency.

Hoisin-Chile Shrimp

 Use a wok or skillet on high heat.
 This was sweet and spicy. I did not add all the chili-paste because of the kids, but I topped mine and hubbies with some Sambal sauce to add heat.
I recently received a new issue of my Clean Eating magazine and this recipe was in it. I love shrimp (and so does little missie) and this recipe was tasty. It is a quick and simple recipe.

Ingredients:

1 tbsp orange zest
1/4 cup 100% orange juice
2 tbsp hoisin sauce
1 tbsp low-sodium tamari
1/2 tsp chile-garlic paste (I used Sambal)
2 tsp sesame oil
1 1/2 lbs green beans (I used sugar snap peas and carrots)
1 lb medium shrimp
4 scallions thinly sliced
1/2 cup unsalted walnut pieces, toasted and coarsley chopped (I left these out since I am the only one that likes walnuts)

Instructions:

1. In a small bowl, whisk orange zest, OJ, hoisin, tamari and chili-garlic paste; set aside.
2. In a wok (which I used) heat oil on high. Add beans and stir-fry stirring frequently for 4 minutes. Add 3 tbsp water and cook 4 more minutes. Add shrimp, scallions and hoisin-chile sauce and stir fry until shrimp are juicy and just cooked through, about 2 minutes. Garnish and serve with rice.

Love This Recipe!

 

I made this recipe this past week and now it is one of my favorites. I added baby bok choy in the dish and the leftovers were even better!

Ingredients

  • Kosher salt
  • 12 ounces wide rice noodles, pappardelle or fettuccine
  • 2 teaspoons toasted sesame oil
  • 1/4 cup oyster sauce
  • 2 tablespoons rice vinegar (not seasoned)
  • 3 tablespoons vegetable oil
  • 1 small Japanese eggplant, sliced into rounds
  • 4 ounces mixed mushrooms, cut into pieces (about 1 cup)
  • 2 cloves garlic, chopped
  • 3/4 pound ground turkey
  • 1 bunch scallions, sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • Sriracha or other Asian chile sauce, for serving (optional)

Directions

Bring a pot of salted water to a boil; add the noodles and cook as the label directs. Reserve 1 1/4 cups of the cooking water, then drain and rinse the noodles. Transfer to a large bowl and toss with 1 teaspoon sesame oil. Mix the oyster sauce and vinegar in a cup; set aside.
Heat 2 tablespoons vegetable oil in large skillet over high heat. Add the eggplant and stir-fry until golden, about 2 minutes. Add the mushrooms and cook until wilted, 1 minute. Push the vegetables to one side and add the remaining 1 tablespoon vegetable oil. Add the garlic and cook 30 seconds. Add the turkey and stir-fry until cooked through, about 3 minutes. Stir the turkey and vegetables together; add the scallions and half of the oyster sauce mixture and cook 1 more minute.
Add the noodles, 1 cup of the reserved cooking water and the remaining oyster sauce mixture and 1 teaspoon sesame oil. Stir-fry until heated through, 1 to 2 minutes, adding more cooking water as needed to loosen. Top with cilantro and serve with Sriracha, if desired.

This is going to be an easy week for meals thankfully. I am super busy this coming week. I have 2 classes, student teachin on Thursday, volunteering in little man's class on Tuesday and the room moms (myself included) are making all the kids in little man's class t-shirts for their parade of places on Friday.

Chocolate Pudding Cake


Cake: (made 12 mini-bundt cakes)
1 package devils food cake mix
1 5.9 oz. package instant chocolate pudding
3 cups milk (for pudding)
1 cup sour cream
4 eggs
1/2 cup applesauce
1/2 cup oil
1/2 cup warm water
2 cups semi sweet chocolate chips

1. Make pudding with 3 cups of milk.
2. Mix all the ingredients together making sure it is well blended.
3. Pour into mini bundt cake molds or regular size bundt cake.
4. Bake 350 degrees mini bundts for 20-22 minutes, large bundt 55-60 minutes. Cool and top with chocolate icing (recipe follows).

Icing:
3/4 cup chocolate chips
3 tbsp unsalted butter
1 tbsp light corn syrup
1/4 tsp vanilla

Put into a microwave safe bowl and microwave 15-20 seconds, stirring afterwards. Do this until chocolate is melted and drizzle over cooled cake.

Buttermilk Biscuits

I have made 3 different batches of biscuits lately trying to find one that we really like. I have made some with whole wheat (which was okay) and some without buttermilk. Buttermilk biscuits are the best and I came across this recipe in The Food Network Magazine from Bobby Flay. I made them for brunch today after church (since we got out early because of the fire alarm).

 This is a simple recipe:
4 cups all-purpose flour, plus more for shaping
1 tbsp plus 1 tsp baking powder
1 tsp baking soda
1 tsp fine salt
1 1/2 sticks cold unsalted butter, cut into small pieces plus 4 tbsp melted
1 1/2 cups buttermilk
1/2 cup heavy cream

1. Preheat oven to 450 degrees and line a large baking sheet with parchment paper.
2. Combine all the dry ingredients and cut in cold butter using a pasty cutter until the mixture resembles coarse meal. Add the buttermilk and mix gently until the mixture comes together.
3. Scrape the dough onto a lightly surfaced flour counter. Pat into a 10-by-12 inch rectangle, about 3/4 inch thick. Use a 2-inch round pastry cutter to cut out biscuits. Press scraps together and repeat.
4. Place the biscuits 2 inches apart on the baking sheet; brush the tops with cream. Bake until golden brown 12-15 minutes. Brush the biscuits with butter and cool slightly.

Corn and Black Bean Salsa

I love making corn salsa and there are so many versions out there. My sister made this one when I was over for dinner and I ended up making it the next day since it was so good and easy.

1 can corn, drained or 2 fresh corn on the cobb (I like fresh)
1 can black beans rinsed
1 can diced stewed tomatoes rinsed
2 cloves garlic minced
1 tbsp olive oil
1 lime juiced
1 cup cilantro chopped
1/2 onion chopped
1/2 red bell pepper chopped
salt and pepper to taste

Mix it all up and let it sit for 30 minutes for all the flavors to come together.

It has been a crazy week! I started school and started out the week sick, congested and exhausted. I did what I could cooking wise, but nothing fancy at all or worth posting recipes for. I hope this week runs a little smoother, though I start my initial student teaching on Tuesday. Here goes another week!

Monday- Chicken marsala with mushrooms and rolls

Tuesday- Buttermilk pancakes, bacon and fruit

I am using up what I have in the frig and freezer for this weeks dinner. I stocked up on ground beef at Whole Foods last week since it was on sale. I am planning on only buying veggies, fruit and milk for this next week.

Kimchi Quesadillas

The Salsa Roja is very good.
Just click on the image to view the recipe on a new page so you can read it. It is a long recipe, but most of the process is for the salsa which is worth it and did not take too long to make. I found this recipe in Clean Eating Magazine. My husband really liked these:) I added pork, since I did not put the Kimchi in the kids quesadillas since it said spicy. Next time I may try a little in the kids because it was not too spicy once I added in all of the ingredients (it is spicy by itself).

Finger Lickin' Ribs



HERE is a great recipe for pork spare ribs

The BBQ sauce is now one of my favorites!
I added 1/4 tsp of cayenne pepper for some heat.
Recipe by the Neely's on Food Network.

Salmon Tostadas

Salmon Tostada

Bake Salmon 400 degrees for 14-16 minutes.
Drizzle olive oil, salt and pepper over the top.

Corn Salsa

If you have not noticed, we like salmon. I make it all different ways and this
recipe is a great summer recipe. If you do not want to heat your house with
your oven then grill your salmon on the BBQ.


Recipe:

1. Cook salmon 400 degrees for 14-16 minutes. I love the non-stick foil for baking fish. Makes for an easy clean up and the fish does not stick at all.

2. Cook corn on the grill or the stove top and cool. Cut the kernels off of the corn. The best way is to use a bundt pan and stick the corn on the center part and the corn kernels will drop into the bowl.

3. Grill 1 jalapeno until charred and slice taking out the seeds. Put into a blender with the juice of 1 lime, 1/4 tsp salt, hand full of cilantro and stream in 1/4 cup olive oil while on puree.

4. Mix the cilantro jalapeno olive oil onto the corn leaving a small portion aside for the dressing. You can mix more cilantro in, chives, grilled red bell-peppers also are great in the corn salsa. Let it rest on the counter for the flavors to come together.

5. For the dressing add 1/2 cup buttermilk ranch dressing to the cilantro jalapeno olive oil mix and juice 2 limes into the blender. Puree and taste to see if you need to add any salt.

6. Mix 1 cup of sour cream with the juice of 1 lime.

7. Bake or fry corn or flower tortillas until crispy and set aside.

8. Mix the dressing and salad together.

9. Put it all together:
    Crispy tortilla
    Salad
    Salmon
    Corn salsa
    Lime sour cream

I can't believe it's that time again! This coming week my hubby goes back to work, we have open house for little man's school and we are gearing up to get back into a routine around here. Having a husband as a teacher makes summers go by fast since we are so busy.

 I went to Food Maxx in Clovis to compare it to the Food Maxx's in Fresno and to use my $5.00 of $20.00 Fresh and Easy coupon.
 Two gallons of milk and a 1/2 gallon of chocolate milk was the big cost.

I went to Food Maxx to use my free coupons a couple of other coupons I had. I also wanted to check out the differences between the stores. I did not see anything worth stocking up on, but with the free coupons I was able to save money. I bought; 2 gallons milk, 1/2 gallon chocolate milk, cilantro, onions, tomatillos, plum tomatoes, 2 packs of Johnsonville brats, 22 pk chips, mustard, ketchup, salad mix, mayo, hot dogs and hot dog buns.

I have to say that I think the Fresno Food Maxx on Blackstone is a bigger store and a wider variety. I was not too impressed with the meat and cereal prices. I saw better prices at Vons in the ad for these food items. I listed at the top a link to see the specials for August, but they do not list any prices. You can sign up for their emails, which I did to see what they send me. I will post later once I start receiving emails from them.
