Black Magic Cake
I found this recipe for black magic cake from allrecipes.com. It has a cup of black coffee in it, so I wanted to give it a try (plus little missie wanted to bake something with me). The frosting recipe comes from one of my new favorite blogs Glorious Treats.
Black Magic Cake
Ingredients:
1 3/4 cups all-purpose flour
2 cups white sugar
3/4 unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup strong brewed coffee
1 cup buttermilk
1/2 cup vegetable oil
1 tsp vanilla
Directions:
1. Preheat oven to 350 degrees and grease and flour two 9 inch cake pans.
2. In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt.
3. Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin, pour into prepared pans.
4. Bake at 350 degrees for 30-40 minutes until toothpick comes out clean.
Cream Cheese Frosting:
1/2 cup butter room temp.
8 oz cream cheese (keep cold)
1 tsp vanilla
1/2 cup cocoa powder (add before powdered sugar)
4 cups powdered sugar
1-4 tbsp heavy cream
1. Combine cream cheese and butter and whip. Add vanilla and cocoa powder. Make sure the cocoa powder is incorporated into the cream cheese before adding the powdered sugar. Add the powdered sugar 1 cup at a time. Add 1-4 tsp of heavy cream to desired consistency.
