Flourless cookie recipe


These easy-to-make peanut butter kiss cookies will be sure to please any crowd! With only (5) ingredients and no flour, this is one simple recipe!!

Easy-To-Make Peanut Butter Kiss Cookies

Ingredients:

■1 cup peanut butter (preferably smooth)
■1 cup sugar
■1 egg
■1 teaspoon vanilla extract
■milk chocolate kisses, unwrapped
Directions:

1.In a small mixing bowl, cream peanut butter and sugar. Add the egg and vanilla, beat until blended. Roll into 1 and 1/4 inch balls, and place 2 in. apart on an ungreased baking sheet.
2.Bake at 350 degrees for 10 – 12 minutes, or until tops are slightly cracked. (WARNING: The cookies will still be halfway gooey) immediately press one chocolate kiss into the center of each cookie. Cool for five minutes before removing from pans to wire racks.

Bucatini with Shrimp

This was simple and fast meal. I am trying to make fish twice a week and I am trying new recipes to mix it up. When I make it again I will add diced tomatoes to the mixture.

You can garnish with more breadcrumbs and parsley like the recipe states. I just added it in all together. I topped it off with a little parmesan cheese and served it with French bread.

Ingredients:
Kosher salt
1 2-inch piece baguette, diced (about 3/4 cup)
1 clove garlic, smashed (I used 4 cloves)
1 cup fresh parsley leaves
12 ounces bucatini or spaghetti
3 tablespoons unsalted butter
2 ounces prosciutto (preferably 1 thick slice), cut into 1-inch matchsticks
3 shallots, thinly sliced
1/2 cup dry white wine
Freshly ground pepper
1 pound shrimp

Directions:
Bring a large pot of salted water to a boil. Pulse the bread, garlic and parsley in a food processor to form moist, green crumbs.

Cook the bucatini in the boiling water as the label directs. Reserve 1/4 cup cooking water, then drain.

Meanwhile, melt the butter in a wide pot over medium heat. Add the prosciutto and shallots and cook until the shallots are tender and beginning to brown, about 6 minutes. Add half of the breadcrumbs and cook, stirring, 2 minutes. Add the wine and the reserved cooking water and cook, uncovered, until the liquid is almost completely reduced, about 2 minutes. Season with pepper.

Add the shrimp and cook until the shrimp is translucent, about 6-8 minutes. Add the pasta and heat through, tossing to coat. Divide among bowls and top with the remaining breadcrumbs.

Steel Cut Oats


I bought Steel Cut Oats yesterday at Trader Joes and put it in the crockpot last night so I could have some for breakfast at 5:15am. Steel Cut Oats is a good source of fiber, protein and is low in fat. You have to add something to the oatmeal if you are not used to the taste. I added a banana, sliced raw almonds and a little brown sugar before my cycling class this morning. I have to say that it helped me out. My legs were aching all night long and I knew I had to have something to make it through my class this morning. The oatmeal also has 27 grams of carbs and only 1 gram of sugar.

To make this in the morning you need about 30 minutes to cook on the stovetop. I can say this is not my favorite thing to eat, but I know it is healthy and it helped my workout this morning, so I will make it again. Next time I will try it with a little milk and honey.

Daddy even splurged on the bed rails so she could have the princess ones. She is doing really well in her new bed and has a big smile on her face when she gets up from her nap or in the morning since she can do it herself.
