French Bread

Since my friend Jessica's sister-n-law brought me some great yeast, I thought I would try this french bread recipe out. Last night I made whole wheat bread and it turned out so fluffy and moist, so now I have confidence to make some more.



French Bread
Adapted from AllRecipes.com
Prep Time: 25 Min
Cook Time: 40 Min
Ready In: 2 Hrs 40 Min

5-6 cups all-purpose or bread flour
5 teaspoons active dry yeast
2 teaspoons salt {sea salt is wonderful}
2 cups warm water {110º F}
1 tablespoon butter, melted
1 egg white
1 tablespoon water

In a large bowl, combine 2 cups flour, yeast and salt. Stir in 2 cups warm water, and beat until well blended using a stand mixer with a dough hook attachment. Stir in as much of the remaining flour as you can.

On a lightly floured surface, knead in enough flour to make a stiff dough that is smooth and elastic. Knead for about 8 to 10 minutes total. {Or knead in your mixer with the dough hook for 8 minutes on low-medium sped.} Shape into a ball. Place dough in a greased bowl, and turn once. Cover, and let rise in a warm place until doubled {about 30 minutes to 1 hour}.

Punch dough down, and divide in half. Turn out onto a lightly floured surface. Cover, and let rest for 10 minutes. Roll each half into large rectangle. Roll up, starting from a long side. Moisten edge with water and seal. Taper ends.

Grease a large baking sheet. Place loaves, seam side down, on the prepared baking sheet. With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf. Lightly beat the egg white with 1 tablespoon of water, and brush on. Cover with a damp cloth. Let rise until nearly doubled, 35 to 40 minutes.

Bake in a preheated 375º F oven for 20 minutes. Brush again with egg white mixture. Bake for an additional 15 to 20 minutes, or until bread tests done. If necessary, cover loosely with foil to prevent over browning. Remove from baking sheet, and cool on a wire rack.

Tips: For an even crispier crust, spray the loaves with water right before baking, then every 5 minutes for the first 10 minutes of baking.

Add-Ins: To make flavored bread, before rolling up the dough, add in the ingredients. The roll, sprinkle a little more on top, then continue on with the recipe.

Grasshopper Fudge Cake

Look at what those sneaky Leprechauns left on little missies door in the middle of the night.

Little man found gold coins under the Leprechauns hat in his room this morning.

Layers of white and green cake, hot fudge and Cool Whip.

I grated chocolate chips and sprinkled them on top of the cake.


INGREDIENTS
1 box Betty Crocker® SuperMoist® white cake mix
1 1/4 cups water
1/3 cup vegetable oil
2 teaspoons mint extract
3 egg whites (I just used the entire egg)
12 drops green food color
2 jars (16 oz each) hot fudge topping
1 container (8 oz) frozen whipped topping, thawed
5 drops yellow food color

Thin rectangular crème de menthe chocolate candies (Andies), unwrapped and cut into pieces, if desired.

1 Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
2 Make cake mix as directed on box, using water, oil, 1 1/2 teaspoons of the mint extract and the egg whites. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
3 Drop green batter by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan 1/4 turn; repeat cutting for swirled design.
4 Bake 28 to 33 minutes or until toothpick inserted in center comes out clean. Run knife around side of pan to loosen cake. Cool completely, about 1 hour.
5 Carefully spread fudge topping evenly over cake. In medium bowl, stir whipped topping, remaining 1/2 teaspoon extract, remaining 9 drops green food color and the yellow food color until blended. Spread whipped topping mixture evenly over fudge. Garnish with candy pieces. Store covered in refrigerator.

Slow Cooker Carne Asada


Some of my favorite ways to top a simple corn tortilla filled with shredded Carne Asada meat are:

diced avocados
pico di gallo
fresh lime
cilantro
pickled jalapenos
diced white onions

Slow Cooker Carne Asada
2 lbs flank steak or stew meat (i.e.- chuck roast)
1 cup salsa (tomato sauce based – like Chi Chi’s or Old El Paso)
1 can diced tomatoes with green chilies (Rotel)
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin

For Serving:
Corn or Flour Tortillas
Diced Avocado
Pico Di Gallo or diced tomatoes and onions
Fresh squeezed limes
cilantro

Combine all ingredients in a slow cooker and cook on low for 8 hours. Before serving, take two forks and shred beef. Stir with juices.

Serve over warm corn tortillas and garnish with pico di gallo, avocados, lime and cilantro.

Note: The sauce tends to make the tortilla break, I recommend doubling up on the tortillas. Two tortillas per wrap.

Freeze This Dish
Want to make it ahead of time? This dish freezes well before and after you cook it. Just take all ingredients and put them in a freezer bag with the meat, and freeze. Thaw before you put into the slow cooker.

My foodie of a son

Since I have been on the subject of St. Patrick's Day on FB, this was our dinner last St. Patrick's Day!

Almost every day my son asks me, "Mom is soda good for you?" or "Why is honey good for you?" Almost everything he east he asks if it is good for you and why. This morning we were talking about why honey is good for you. I told him that honey comes from bees and that God made bees. Food that comes from the earth and that God provides is healthy and what most of our diet should contain. I said that this is called whole food. He repeated, "Whole food."

We passed Baskin n Robbins on the way to the park and he asked if ice cream was good for you. I said, not if you eat it every day. It is fine to have ice cream in moderation, meaning every now and then because it has too much sugar.

He got some 7 Up at dinner the other night (which he rarely ever has soda) and he asked if soda is good for you. I said no, it is called empty calories because it does not provide you with any nutritional value. Then he said, "Why does Dad drink soda then?" I told him that he is still growing and it is not good for kids to have empty calories because they need nourishment for their growing bodies.

This afternoon I was drinking a Diet Coke and he asked what I was drinking. I said a diet coke. He told me, "Mom, soda is not good for you. Why are you drinking it?" I am drinking it because I have drank so much water today and I just wanted something different. He said, "You do drink a lot of water, that is what I always see you drink." That kids watches us like a hawk!

Yes, that is how our conversations have been going when we eat or drink. I may have to break out my nutrition books soon!

My best shopping trip!

After having issues at the Vons by my house, I decided to go to the one on Cedar and Shepherd last night while the kids were at Awana's. My friend Jessica said that they always take all of her coupons there, so I thought I would check it out.

Every now and then my coupons line up with the sales and I had a lot of coupons. This is by far my best shopping trip and the checker was asking me what sites I use and how she could get free product coupons.

As you can see on my receipt I spent $36.44 after coupons and store savings. I saved $93.12! I have never saved 72% on one of my shopping trips. The lady behind me was not pleased though. The checker had to get a managers over ride since I had so many coupons. I really liked this Vons and it had a lot more of a selection then the one on Blackstone and Ashlan, so I may be hitting the Vons out there when I am out that way.

Barilla Pasta was on sale for .88, bought 3.
Jell-O Temptations was on a introductory price $1.99, I had 3/$1.00 coupons plus I receive a $2.00 catalina coupon for my next shopping trip.
Motts and Ocean Spray juice 3/$5.00
Welchs Grape juice $1.77 in store coupon.
OM carving board lunch meat on sale $3.49 plus I had a $1.00 coupon, $2.49.
Thomas bagel thins on sale for $2.79 and I had a $1.00 coupon, $1.79
I bought some fruits and veggies that were on sale too.
And the most expensive thing I bought was mint extract for $4.49! It about killed me!
