Gingerbread Train

Because I did not buy a gingerbread house kit when I saw them in a 100 different stores, I ended up with a gingerbread train today. I think it turned out really cute and it was easier to put together.

Little man has been asking to make one for the last couple of weeks and both the kids really had fun decorating the train and eating the candy.

They are proud of their work! They can't wait to show it off to everyone of Christmas.

Chicken Pot Pie Soup

I did not add any chili powder or paprika on the biscuits since the kids do not like them that way. I did put extra pepper in my soup.

I used a bag of mixed frozen veggies tonight. It had corn, peas, carrots and green beans.

Chicken Pot Pie Soup

1 can refrigerated biscuits or crescent roll
sweet paprika or chili powder, for sprinkling (I prefer chili powder)
1.5 lbs chicken breast pieces, diced
3 tablespoons butter
1/2 tablespoon salt
1 tablespoon pepper
2 ribs celery and greens from the heart, chopped (I use the heart leaves too)
1 medium yellow onion, chopped
2 large carrots, peeled and diced (or use mixed frozen veggies)
Salt and pepper, to taste
2 teaspoons poultry seasoning (If you do not have this on hand, use a chicken bullion cube)
3 tablespoons all-purpose flour
1 cup potatoes cubed
2 cups whole milk (or half & half or cream to make it thicker and creamier)
3 cups chicken stock
1/4 teaspoon grated nutmeg, a healthy grating (optional)
1 cup frozen green peas

1. Preheat oven according to package directions and arrange biscuits on cookie sheet. You will might have extra biscuits. Save them for ham and cheese or egg and cheese breakfast sandwiches the next morning. Sprinkle biscuits with a little paprika or chili powder and bake for 10 to 12 minutes.

2. Cut chicken into cubes.

3. In a medium pot over medium to medium high heat, cook chicken in butter 2 minutes then add veggies and potatoes and season with salt and pepper and seasoning. Cook 5 minutes more, add flour cook another minute.

4. Stir in whole milk (half and half or cream) and chicken stock. Add nutmeg. Bring soup to a boil by raising heat, then turn heat back to simmer and cook soup another 10 minutes. Adjust seasonings. Add peas. Stir in to warm them through a minute.

TIP: If the soup is not thick enough for you, take 1-2 T of flour with some of the warm liquid in a separate cup and mix until it has no lumps. It will be a thick gravy-like consistency, then add to the soup. Stir and it will thicken within about 15 minutes.

Snowstorm!

The kids helped me with the showering of powdered sugar on the snowstorm cookies. I don't know if they had more fun eating them or playing in powdered sugar.

Poor little missie fell today and got a scratch on her face. I think the powder sugar makes for good medicine! It's even in her hair!

Little missie was covered in powdered sugar from head to toe and so was the kitchen!

The kids helped last year with these cookies and it was a lot of fun doing it again with them. Little man helped me make 2 loaves of banana nut bread too. He is my egg cracker. I love that they like to help out in the kitchen.

Meal Plan Monday



Monday- Cheeseburgers with sauteed mushrooms and onions and salad

Tuesday- Greek Style Halibut

Wednesday- Chicken pot pie soup

Thursday- Asian meatball subs

Friday- Making scalloped potatoes for Christmas Eve dinner

Saturday *Christmas*- Prime Rib, Green beans with bacon and fried shallots, garlic mashed potatoes, cranberry jello salad, rolls, horseradish sauce and a birthday cake for baby Jesus. (I am making everything except the rolls and jello salad).

Christmas Stocking Cookies



I made 27 cookies for little man's class tomorrow. I love stocking cookies for some reason and made them last year for his preschool class. This is the best sugar cookie dough recipe I have found!

Recipe
2 1/2 cups flour
2 sticks butter (room temp)
3/4 cup sugar
1 large egg
1/4 tsp baking soda
1/4 tsp salt
1 tsp vanilla

Mix the flour, baking soda and salt together in a bowl. In a separate bowl add your sugar and butter and mix until creamy then add your egg and mix 2 minutes until fluffy. Add your vanilla and slowly add your flour mixture until combined. Pour dough out on plastic wrap and wrap up in a ball. Refrigerate dough 1 hour to 3 days. Cut out the shapes you want and place on a cookie sheet with parchment paper. Put back into the frig until the cookies firm up again. Bake at 350 degrees for 12-15minutes until it starts to lightly brown. Cool and decorate.

Icing
2 1/2 cups powdered sugar
1 tbsp room temp butter
2 tbsp of water to start plus more for desired consistency
1 tbsp light corn syrup
1/2 tsp vanilla

Mix on low speed with a hand mixer. Mix in water to desired consistency then add food coloring. And that is it, very simple.
